在京都麗思卡爾頓酒店的MIZUKI餐廳，坐在精美的花崗岩檯前，品嘗割烹風格天婦羅，經驗豐富的藤元主廚會直接在賓客面前準備食物，只選用最好的時令食材，使用天然秘製的紅花油打造酥脆美味的口感，更添獨特的清淡香味。

在日本美食中，天婦羅的名字大約已有150年的歷史。天婦羅的烹製方法中最為關鍵的是麵糊的製作。

天婦羅以雞蛋麵糊為最多，調好的麵糊叫天婦羅衣，做面衣用的麵粉，日語叫薄力粉，是麵筋少的麵粉。這種麵糊做出來的天婦羅掛麵薄而脆。

天婦羅水暉餐廳的廚師長藤元健司，自1997年起開始其日本料理的烹飪職業生涯，曾任職於大阪麗思卡爾頓酒店花筐餐廳11年。2007年進入新天地天婦羅鐵板Gi高級餐廳進一步提高烹飪技巧，在2014年京都麗思卡爾頓酒店開業時擔任天婦羅水暉餐廳的主廚。

他在天婦羅烹飪領域憑藉無與倫比的品質獲得高超讚譽。水暉獨一無二的特色是除了視覺的美感和獨特的口味以外，賓客也可以同時體驗到食材浸入熱油時，散發出的聲音和香氣，通過五感盡情享受這美食體驗。

Tempura Mizuki, situated in The Ritz-Carlton, Kyoto, is a Japanese tempura restaurant that specializes in tempura made with seasonal ingredients, served in a traditional counter-style restaurant space.

With over 20 years’ culinary experience, Chef Kenji Fujimoto takes the helm at Tempura Mizuki, and played an instrumental role in the restaurant gaining its first ever Michelin star in the 2018 Michelin Guide.

Tempura uses first-pressed benibanayu (or safflower oil) for a light and fresh crisp that retains the natural taste of the ingredients. The must-try signature creations are our original Omi Beef Filet Rolled with Japanese Basil, and Egg Yolk Tempura.

自2月1日起至3月15日，京都麗思卡爾頓酒店日料餐廳“水暉”懷石將與連續五年獲得米其林三星評定的“京懷石·吉泉”合作，限時為賓客提供懷石料理。

開業於1983年的京都懷石料理店——“京懷石·吉泉”坐落於1994年被登錄為世界遺產下鴨神社旁。以神社內的參天古樹為靈感，吉泉秉承傳統理念，精選日本各地食材，一直致力於為賓客提供至上美食。

關於“京懷石·吉泉”亭主谷河吉巳先生

15歲開始學習京都料理，師從50位大師，在多個餐廳積累豐富經驗，並深愔茶道、花道、香道、書法、詩歌之心得，蘊育了極高的審美意識。26歲就任嵯峨嵐山的日料餐廳廚師長。1983年開設“吉泉”餐廳，2年後遷址至下鴨神社附近，孜孜不倦追求京懷石料理的最高境界。2009年至2012年，獲米其林兩星，2013年至2017年獲評米其林三星餐廳。谷河先生更因1999年在烹飪節目鐵人主廚中擊敗著名的森本正治主廚而名聲大噪。

In feudal times, samurai warriors practiced the performing art of kenbu (literally “sword dance”) to prepare themselves for battle.
