雍頤庭餐廳,位在上海浦東濱江商業區的文華東方酒店(Mandarin Oriental Pudong,Shanghai)裡,顧問主廚Tony(盧懌明)是上海新一代創意廚師,名列San Pellegrino「亞洲五十佳餐廳Asia's 50 best restaurants」No.16的福1015就是由他主理!雍頤庭主打江南菜,大廚認為酒店住客既然選擇中菜廳,會想嚐當地菜式的風味,所以這兒出品味道都會遵於傳統,喜歡簡約風格的他只為菜式在賣相上作改良以及偶爾加入季節性的新食材。(內含HD影音)

榛果鵝肝醬伴葱油餅、禿黃油撈飯、豆漿雪糕配油條,是Tony在上海「福」數字系列餐館的玩味菜式。身為顧問總廚,創意一樣多,黑松露素粉果、龍帶墨魚餃、蝦米水芹卷,以花俏的名字突出主題點心。當然本幫菜裡的燻鯧魚、煮牛尾、香酥鴨也在其中。

雍頤庭的主廚盧懌明就是上海的頂級名廚,採用新食材前大廚都會精心挑選過,既要配合味道又不能與傳統口味大相逕庭。其中他精心設計的就有鹽水鵝肝,原型出自揚州名菜鹽水鵝片,轉用了鵝肝後讓味道更香,同時亦保留了原來的風味!

盧總廚出生及成長背景都在上海從小就對烹飪充滿熱情他曾於多間粵菜館累積寶貴經驗終成知名主廚今年亞洲五十大餐廳當中就有兩家餐廳上榜,實力不容小覷

Tony的招牌菜式有,芥末菜心滷冬菇,冰鎮過後色透翠綠的小棠菜浸上秘製的青芥末醬油,非常特別的口感。冷菜熱做,把傳統上海涼菜味道提升,魚鮮口滑的感覺,比凍實的燻魚來得更具親和力。牛尾在上海是連皮吃的,傳統是用茄汁及洋葱煮,雍頤庭是紅棗栗子燴,甜美味道混和醬油就是天然香。

當然始於春秋,興於隋唐,盛於明清,素有“江南第一風味的淮揚菜,也是這裡主打的菜系之一。淮揚菜選料嚴謹、因材施藝;製作精細同時追求本味、清鮮平和。

淮揚菜十分講究刀工,一塊2mm(釐米)厚的方乾,能批成30片的薄片,切絲如髮。另外冷菜製作、拼擺手法要求極高,一個扇面三拼,抽縫、扇面、疊角,寥寥六字,但刀工拼擺難度極大,使得淮揚菜如同精雕細鑿的工藝品。

在烹飪上則善用火候,講究火功,擅長燉、燜、煨、焐、蒸、燒、炒;原料多以水產為主,注重鮮活,口味平和,清鮮而略帶甜味。其招牌菜餚雪菜黃魚餛飩便是集此大成之傑作

彷若典雅宮殿的雍頤庭餐廳內設有8間豪華的私人包房,其中部分包房可直通熱帶景觀庭院。同時,擁有開放式廚房的主廚料理桌,可使賓客享有特別服務及欣賞精彩廚藝展示。

Born and raised in Shanghai, Chef Lu’s passion for cooking began as a child. His career began as he gained experience working in several high-end Cantonese restaurants before rising to international prominence as the culinary mastermind behind Shanghai’s finest independent Chinese restaurants Fu1039, Fu1088 and Fu1015.
