甫獲得亞洲50最佳餐廳第25名的EAT ME餐廳,在曼谷經營已超過十年的時間,卻能歷久彌新,特別是在主廚Tim Butler的職掌下,海納各國料理的精髓,讓EAT ME的餐飲始終維持在水準之上;不僅如此,整間餐廳的服務熱忱加上氛圍的塑造,僅管規模不似大飯店,來自各國的饕客卻始終絡繹不絕。(內含HD影音介紹)
雖然Eat Me是曼谷美食界的前輩,但這家餐廳還保持著新鮮有趣的形象:結合了餐廳、Lounge Bar、時尚畫廊,更重要的是其靈魂人物主廚Tim Butler,來自紐約的他,因為在美國遇到所愛的泰國女子,於是決定落腳曼谷,浪漫的姻緣最後成就出一間不凡的餐廳。
Tim告訴我們,原先在洛杉磯一家海鮮餐廳工作的他,2006年到了紐約,在名廚Daniel Boulud旗下的餐廳工作兩年,遇上了命中注定的有緣人、也就是Tim的泰國老婆後,也讓他愛上了泰國這個國家,因緣際會下2010年他加入了Eat Me這間餐廳,開始在廚房裡展出真誠的創造力!
他把世界各地的美食結合在一起,菜式以大膽的味道組合為特色,例如在前菜中就注入了多元化的國際食材,包括阿拉斯加扇貝配上鱷梨、柚子和義大利鹹肉,他創作出來的雞肉沙拉也很經典,除了雞肉外,還加入了紅木瓜、烤椰子和蔞葉沙拉。
同時Chef Tim Butler也清楚何時應讓食材保持簡單,像黑松露和帕爾瑪乾酪義大利米飯,以及澳洲和牛肉加入生鮮日本海膽…等經典菜式,從而演繹出他對口味全面、而且深入的瞭解。
“很難去定義我的料理是哪一種類型,只能說我喜歡簡潔、新鮮與當季有機的食物!” Chef Tim悠然自得地表示。看他做菜也是一種享受,不疾不徐、游刃有餘,偶爾帶點頑皮,菜式呈現出來卻層次分明、充滿巧思。
Eat Me雖然是位在曼谷Saladaeng的不起眼小巷內,卻在細長的水耕植物完美的遮掩下,呈現出低調卻又時尚的氛圍,每晚提供給來自各國的美食饕客最完美的饗宴。昏暗的空間只有蠟燭的微光亮恍恍以及畫上優雅的投射燈,二樓的用餐空間,挑高的開放空間顯得不壓迫,桌椅與牆上的畫作整齊的排列著,營造出時尚典雅的用餐環境。
也可以選擇戶外的露天桌位,不怕街上的行人來來往往的會打擾到用餐,植物是最天然最美麗的遮蔽,也帶給餐廳不少綠意,彷彿就像在叢林裡享用晚餐一樣、風情無限。
這家餐廳主要用餐區有兩層,帶有優雅、溫和的色調,內設酒吧和用竹子圍繞著的陽臺。一到夜晚,閃爍的燭光為客人提供浪漫、迷人的就餐環境。再加上熱情的服務和美味的雞尾酒(無花果和生薑馬丁尼是其中一個歡迎的選擇),Eat Me始終是一個深受各國饕客愛戴的用餐之地。

鵪鶉佐鵝肝(法國料理)
QUAIL + FOIE GRAS
選用進口的鵪鶉去腥處理後,燻烤加上主廚特製醬汁,讓您回到法國美好年代的經典料理、
日本炙燒和牛肉加海膽及山葵(日本料理)
WAGYU TATAKI + UNI + WASABI
此道菜主廚創意,來自日本料理中的生和牛,選用特A和牛炙燒後,加入北海道海膽及山葵,和牛入口即化,再加上北海道海膽,享受到海、陸饗宴。
帝王蟹加有機番茄及魚子醬(義大利料理)
KING CRAB + HEIRLOOM TOMATO+ CAVIAR
選用阿拉斯加的帝王蟹,與清邁有機番茄、是一道經典的義大利佳餚。
熊本生蠔加海膽(日法料理)
KUMAMOTO OYSTER + UNI
從日本熊本進口的生蠔,上面加上海膽,充滿驚喜,最後打上用海鹽製成奶泡裝飾。
炙燒日本大干貝加法國松露及爆米花(義法料理)
選用北海道干貝與黑松露,主廚加上了爆米花,增添了趣味性。
巧克力黑胡椒
CHOCOLATE + CHILI
這是CHEF Tim Butler招牌菜
熱巧克力布朗尼,加上黑胡椒,苦、辣、甜三種口味,最後在加上黑胡椒巧克力冰淇淋,一口吃下,冷、熱交替,口感更是一絕!

Doubling up as an art gallery and open until the early hours, Eat Me is a favourite with young, cultured internationals in Bangkok. Set over two floors interspersed with edgy modern art, the restaurant also houses a lively bar serving fine cocktails – with the fig and ginger martini a particularly popular choice.
Tim Butler came to Eat Me in 2010 after two years working in restaurants and running his own catering company in Bangkok, and was responsible for revamping the menu at the long-established restaurant. His dishes bring a mix of global ingredients and influences, Butler’s creativity brings a fresh, progressive feel to the menu, cementing Eat Me’s position as a favourite of Bangkok’s dining and nightlife scene.
Born in Portland, Maine, Chef Tim Butler lived in New York City and Southern California before moving to Bangkok in 2009 and joining Eat Me in 2010 as executive chef, where he evolved the cuisine into the modern, Asian-influenced, international comfort food that has won the restaurant awards.
Chef Tim’s industry experiences goes way back to his first job as a fourteen year-old as a dishwasher in a small Italian restaurant. A 1998 graduate of the esteemed Culinary Institute of America, Tim was made executive pastry chef of Aquavit in New York City under Chef Marcus Sammuelson at the ripe old age of 21, and in 2007 was named New York Rising Star Chef.
Highlights of Chef Tim’s career include opening the acclaimed Los Angeles restaurant Providence with Chef Michael Cimarusti, working as pastry chef at Bernardus Lodge in his hometown Carmel, and working at Restaurant Daniel under Chef Daniel Bouloud in New York.
Tim has been a chocolatier, written recipes for countless cookbooks, ran his own catering company, and continues to provide restaurant consultancy services when he’s not in the kitchen at Eat Me.
